Honey Roasted Parsnip Soup: A Delicious and Surprising Twist on a Forgotten Classic

There's something about parsnips that could make you feel like less than a sophisticated cook. Maybe it's their unique shape, or their “just  out of reach” placement in the produce section, or the way your mother always boiled the life out of them.

Whatever it is, this Honey Roasted Parsnip Soup will make you feel like a master chef!

Roasting along with the addition of honey takes this soup to a whole new level, and the flavors are truly amazing.

Many people find parsnips to be a little too sweet, so sprinkling them with honey may seem paradoxical. However, as the honey cooks, the tastes deepen and evolve, and the sharpness of the sweetness actually mellows!

This soup has been added to our regular soup rotation simply because it is so tasty — something you would not imagine from the humble parsnip!
