Beekeepers clamber to place their hives on the wet barks or even barges in the remote swamp wetlands of Florida and Georgia. The fragile blossoms of the White Tupelo (Nyssa Ogechee) tree provide the prized nectar for a mere 2-3 weeks in April/May. If it's too dry or windy, the nectar evaporates. If it's rainy, the nectar will be washed away. If it’s to cold, the bees won't fly.
It may sound like an awful lot of effort to go through, but once you have tasted Tupelo honey for yourself, you will understand why.
Pure tupelo honey is light amber in color.
